Dutch Baby Pancakes
a 10″ cast iron skillet at least 2″ tall, or a 2.5 quart dutch oven
6 Tablespoons butter (or coconut oil)
1 ½ cup flour (regular or GF)
1 ½ cup milk (non-dairy is fine)
Preheat oven to 425 F
Put butter in pan – and put pan into oven
Watch closely until butter melts (but doesn’t burn)
Blend eggs thoroughly in blender
add milk and flour and blend again
Remove pan from oven
Pour mixture into pan
Bake at 425 F for 25 minutes (When you take it out, it will be puffy, but will deflate quickly.)
Serve with your favorite sweet or savory toppings.
